A simple and healthy recipe for mornings. These muffins are a perfect solution for those browning bananas on your counter. They also last all week if you keep them covered at room temperature.
Ingredients
3 bananas, the riper the better
6 tbsp melted butter, at room temperature.
2/3 cup brown sugar
1 egg
1 tsp vanilla extract
2 tbsp milk
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
Chocolate chips (optional)
Instructions
Pre- heat oven to 218°c!!!
In a small bowl, mix flour, baking soda, baking powder, and cinnamon.
In a large bowl, mash the bananas. Add the butter, sugar, egg, vanilla extract, and milk. Whisk.
Add the flour mixture to the banana mixture. Mix.
Add chocolate chips if you want.
Spoon the mixture into muffin liners.
Bake for 5 minutes at 218°c. Reduce the temperature to 177°c! Let the muffins continue to bake for 15-18 minutes. The house should smell great at this point.
Take the muffins out and let them cool for 5-10 minutes.
